My local Kroger has Rib Roasts on sale for $5.99/lb. I decided it was nice price point to try one smoked. I purchased this one that was just under 5 lbs.
I decide to not do a heavy seasoning and only seasoned it with pepper, garlic and salt. The smoker was running about 250 and I did a mixture of hickory (my favorite) and mesquite (a powerful smoke wood).
This was what it looked like at 1 hours in.

I removed it at about 3:15 in, and it actually was a little bit over temp for my target. I should have been pulled at 135 when measuring the thickest portion.

I then let it rest for 20 minutes before slicing. It was a beautiful medium. It was really good, it was tender and had a nice smoked flavor. I would definitely do this again.
