The waiting is the hardest part

I completed a cold smoke today even though it was a very hot day. I started early and filled the water pan with ice. I used the pellet smoking tube and smoked white cheddar, sharp cheddar and Colby-jack. I smoked it for 3 1/2 hours using cherry pellets.

I then vacuum seal it, refrigerate it and let it mellow for at a minimum of 3 weeks before eating.

Here is the finished product, it was aged for almost 4 weeks since the smoke. Nice smoked color and amazing smoked flavor.
