I was looking for something new to smoke and found these great looking short ribs at Sams. I loved the marbling of the ribs and decided to give them a try. Cost was just under $10/lb, and the package was $31 plus tax.

I decided to dry brine them with coarse salt for 8 hours prior to the smoke.

I seasoned the ribs with pepper, garlic powder and onion powder. I placed some soy sauce and some Worcestershire sauce in pan, then placed the ribs in the pan and added a little more of each on top of the ribs. It was applied for flavor and for moisture during the smoke.

I smoked them on 22″ Weber Smokey Mountain, the two pans fit, but I had to bend them to get the cover on the smoker. I went with two pans because I wanted the ribs to have a little breathing room in the smoker. I added some charcoal to the bottom chamber and added a full chimney of lit on top and 2 small chunks of hickory wood. I did flip the ribs at the 2 hour mark, with a plan of smoking them for 4 hours.

The ribs were very tender with incredible aroma when finished right at the 4 hour mark.

To pair with the ribs I decided to cook some fried rice. I cooked the rice in the instant pot, then spread it out on a baking sheet and refrigerated the rice for several hours. I cooked the rice on my Blackstone grill and added some yellow onion, some green onion, some frozen peas and carrot and three eggs. I used soy sauce to give it some flavor and color during the cook.
